Menu Plan Monday, Week of 7/12

I’m not feeling very inspired to cook this week as I have cupcake baking on my mind. So you’ll see a cupcake recipe thrown in that I’m planning on trying on Friday!

MondaySmoked Sausage and Zucchini Saute. I have some beautiful zucchini for this one!

Tuesday – Hot dogs on the grill with a tri-color pasta salad (cold tri-color noodles, some mild cheddar cheese chunks, olives, artichoke hearts and italian salad dressing).

Wednesday – Breakfast for dinner. I’m planning on making something with scrambled eggs…cheap protein! Probably a burrito.

ThursdayHomemade lasagna. This should hold us over for a couple of days while I do some baking.

Friday – Leftovers for dinner while I bake Red Velvet Cupcakes.

Saturday – Grilling rib eye steak that I picked up at A&P this week for $4.99/pound along with some sweet corn.

Sunday – At a friend’s barbecue.

Menu Plan Monday 7/5 – 7/11

The girls and I always love when we get an extra day with Daddy, and today is one of them! It gave me the opportunity to make some homemade BBQ sauce for grilling in the evening. I only hope it cools down – we’re in the low 90′s here in Northern N.J. right now. As for the rest of the week, I’m focusing on recipes that avoid using the oven!

MondayHomemade BBQ Sauce on Grilled Chicken Drumsticks (on sale for $0.79/lb. last week), simple cold pasta salad of macaroni, mayonnaise, salt, pepper, onion powder and peas.

Tuesday – Leftover barbecued drumsticks and salad.

Wednesday – Crock Pot: Snack Mix Recipe. I’ve been wanting to get rid of some of the cereal stockpiled in the pantry! I’m sure the girls will love this for snacktime.

Thursday – Soup from the pantry and grilled cheese sandwiches.

Friday – Breakfast for dinner.

SaturdayGrilling a whole chicken.

Sunday – A Day Out With Thomas today with good friends!

Menu Plan Monday 6/14 – 6/20

What a great weekend! We had two birthday parties to attend, which made it busy but fun. This week I’m excited about buying a whole beef tenderloin for filet mignon, on sale at ShopRite this for $4.99/pound, but I’m going to freeze it until the beginning of July when my husband’s dad and stepmother visit.

Monday – Macaroni & Cheese Casserole from the freezer.

Tuesday – Hamburgers on the grill for my husband’s birthday. I’m planning on making him his favorite Chewy Oatmeal Raisin Cookies with our daughters.

Wednesday – Homemade Pizza using Fleischmann’s Pizza Crust Yeast. I just love making pizza dough with this.

Thursday – Breakfast for dinner. Eggs are on sale at ShopRite this week, so I’m going to make this easy Cheese Quiche.

Friday – Leftovers so I can pack for the weekend.

Saturday – We’re leaving at 6 a.m. to go away for the weekend!

Sunday – Home from our mini “vacation” sometime in the evening.

Menu Plan Monday 6/7 – 6/13

This week’s menu plan is relying heavily on what I have in the freezer and pantry. We went way over budget last month, so I’m only going to be buying fresh produce and milk when I hit the grocery store later this week.

Monday - I defrosted some ground beef for grilling hamburgers tonight and to make meatballs for Thursday. No homemade buns, though, because I’m out of yeast!

Tuesday – Slow Cooker:Sarge’s EZ Pulled Pork BBQ with coleslaw on the side.

Wednesday – Breakfast for dinner. Planning on using some bacon from the freezer.

Thursday – Spaghetti with sauce and Maria’s Homemade Meatballs.

Friday – Using leftover bacon from Wednesday to make BLTs sandwiches.

Saturday – Family is coming over for a barbeque. I’m marinating a london broil using my absolute favorite Savory Steak Marinade.

Sunday – Have leftovers and relax.

Menu Plan Monday (on Tuesday) 5/31 – 6/6

Last week instead of grilling our whole chicken on Sunday as originally planned, we grilled it yesterday for Memorial Day. One reason I love making a whole chicken is because it’s such a great multi-tasking meal, which means you’ll see a couple of meals in this week’s menu that feature leftovers!

Monday – Memorial Day! Slow-Roasted Chicken on the Weber Grill, Shell Pasta Salad, canned baked beans.

Tuesday – Grilled cheese sandwiches with tomato soup.

WednesdaySour Cream Chicken Enchiladas with lettuce and chopped tomatoes.

Thursday – Leftovers night.

FridayClassic Pillsbury Chicken Pot Pie for lunch (so easy, and I need to use some of the frozen Pillsbury pie dough in the freezer). Pizza delivery for dinner.

Saturday – Hamburgers on the grill. I’m trying out a new recipe for Burger Buns.

Sunday – Barbecue at friends’ house.

Menu Plan Monday 5/24 – 5/30

This past weekend was a busy one for our family. We had a big Birthday Party for our two daughters, which was more of a Block Party because most of their friends live on our cul-de-sac! We have lots of leftovers, which I’m going to incorporate into this week’s meals. I highly recommend you try making the 4-Bean Salad. It is my sister’s recipe and is one reason why I live for ShopRite’s Can-Can sale twice a year – it gives me the opportunity to stock up on all the beans I need to make it for the summer!

Monday – Sandwiches using leftover lunchmeat from the weekend party with 4-Bean Salad.

Tuesday - Shrimp Scampi. It’s so quick to make, and I really need to use some frozen shrimp I have in the freezer.

Wednesday – Breakfast for Dinner: Broccoli and Cheese Omelets

Thursday – My mom is staying over tonight, and my husband is working late, so we’ll probably just pick at something from the fridge.

Friday – Hot dogs and burgers on the grill.

Saturday – Barbecue at our friend’s house.

SundaySlow-Roasted Chicken on the Weber Grill. This meal will multi-task into next week for chicken salad and enchiladas!

Menu Plan Monday 5/17 – 5/23

Last week I posted about the benefits of menu planning and hope some of you are trying it out for yourselves. Let the rest of us know how it goes! Here’s my plan for this week:

Monday – When I made Crockpot Chicken Tortilla Soup yesterday I put in two extra chicken breasts to cook, which I shredded and refrigerated to use tonight for Chicken Quesadillas.

Tuesday – Shake N Bake (free at ShopRite this week!) Pork Chops with steamed frozen veggies.

WednesdayBeef with Broccoli. I’ll be using fresh broccoli that’s on sale this week for $0.99/pound.

Thursday – It our daughter’s 3 rd Birthday, so I’m planning on making cupcakes and ordering pizza for dinner, which is a special treat in our house.

Friday – Leftovers. There’s still plenty of Crockpot Chicken Tortilla Soup and there may be extra Beef with Broccoli.

Saturday – Grilled hot dogs and hamburgers at our daughter’s Birthday Party!

SundayGood Morning Muffins. These are delicious and my 3-year old will actually eat a whole one. I love the combination of carrot, coconut and raisins, too.

Menu Plan Monday 5/10 – 5/16

Welcome to my first weekly Menu Plan! I’m looking forward to sharing some fantastic recipes with you, and hope you’ll share some recipes, too.

Here’s what we’ll be eating this week:

Monday – Spaghetti and Pasta Sauce from the pantry with Toasted Garlic Bread using leftover homemade hot dog buns from the weekend.

Tuesday – Grilled Cheese and Soup from the pantry

Wednesday – Homemade Pizza

ThursdayBacon Cheeseburger Meatloaf. I use ground turkey for this, so I’ll be using the $0.49 Butterball Ground Turkey that I’ll be getting from ShopRite this week. This meatloaf is a major kid-pleaser in our house.

Friday – Leftovers (probably meatloaf!)
